Carrot Muffins
2 cups flour
3/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 eggs
1/2 cup oil
1 cup grated carrot
1 cup crushed pineapple with juice
Mix first 7 ingredients in a large bowl. Make a well in the center.
In another bowl beat eggs untill frothy. Add cooking oil, carrots, pineapple and juice.
Pour into well. Stir only till moisten. Batter will be lumpy.
Fill greased muffin cups 3/4 full.
Bake at 400F for 20-25 min.
let muffins sit in pan for 5 min before removing them. Makes 1 doz.
