Oatmeal Chocolate Chip Cookies
1 1/2 cup self-rising flour
1 cup vegetable shortening
3/4 cup dark brown sugar
3/4 cup white sugar
2 eggs
1 tsp. hot water
1 pkg. (12 ounces) real chocolate chips
2 cups minute oatmeal
1 tsp. vanilla
Preheat oven to 375.
Mix flour and shortening until smooth, 1 minute on high. Beat in sugars, 1/2 cup at a time, until fluffy. Reduce speed to low. Beat in eggs, 1 at a time. Add hot water, vanilla, oatmeal and beat until combined. Fold in chocolate chips.
Drop by rounded teaspoonfuls 2" apart onto baking sheet. Bake 8 to 11 minutes or until slightly browned around the edges. Cool 2 minutes. Remove from baking sheets and cool completely. Store in airtight containers.
