Kolaches

1 Tbsp Yeast
1/4 Cup Warm Water
4 Tbsp Sugar
3 Tbsp Butter
3/4 Cup Milk
1 Egg
3 1/2 Cups Flour

10 Slices Ham (sandwich size)
10 Slices Colby Cheese (1/2 sandwich size)

In a large mixing bowl, add yeast, water and 1 tbsp sugar and allow to sit for 5 to 10 minutes. Using a large measuring cup, warm milk to room temperature and add softened butter, egg, 3 tbsp sugar and mix well. Add milk mixture to yeast mixture and mix well. Add the flour to the mixture and mix and knead until combined. The dough should be elastic and not stick to your hands easily, if the dough is sticky, slowly add more flour. Place dough in a bowl, cover and allow to rise for 1 hour. The dough should be allowed to rise at room temperature in place free from drafts.

Divide the dough into 10 equal portions.
Flatten each portion into 5 inch "pancakes" and place 1 slice of ham (cut into 3 pieces) and 1 slice of cheese in the center. Fold the dough around the ham and cheese, making them into a ball. Place on an oiled cookie sheet and bake at 400ºf for 15 minutes.

Freezing instructions: after rolling the kolaches and before cooking, place on wax paper and freeze for 1 hour until hard. Put the kolaches in a sealable freezer bag for storage. Cooking instructions after freezing: allow kolaches to thaw for 10 minutes on oiled cookie sheet. Bake on 350º for 20 minutes or until golden brown.
