Oatmeal Crispies
1 Cup Shortening
1 Cup Sugar
1 Tsp Vanilla
1 Tsp Salt
3 Cups Quick Cooking Oats
1 Cup Brown Sugar
2 Eggs, Beaten Well
1 1/2 Cup Flour
1 Tsp Baking Soda
1/2 Cup Nuts
Thoroughly cream shortening and sugars. Add eggs and vanilla, beat well.
Sift dry ingredients, add to creamed mixture. Add oats and nuts, mix well.
Shape into rolls, wrap in waxed paper and chill thoroughly.
Slice 1/4" thick, bake on ungreased cookie sheet in 350 degree oven for 10 minutes.
Makes 5 dozen.
For a more chewy version, drop by spoonful on cookie sheet.
