Italian Vegetable Soup

1 Diced onion
3 Cloves garlic
1 cup each carrots and celery
1 sm. yellow squash
1 sm. zucchini
2 cups each fresh broccoli and cauliflower
1/2 cup sliced mushrooms
1 can whole tomatoes
1/2 can tomato sauce
1 tsp basil
1 tsp oregano
6 cups water
2 or 3 chicken boullion (to taste)

Lightly sautee onions in olive oil. Add carrots and celery and small amount of water to prevent burning. When vegetables soften (Approx. 3-5 min.) add zucchini and squash. After 3-5 min. add remaining vegetables, spices, water and boullion. Bring to a boil and simmer 15 min. Add your favorite pasta and boil according to package recommendations.
(This soup is excellent with fresh Parmesan cheese sprinkled over each serving!)
