Sugar Cookies
makes 5 dozen [if you don't have "official cookie testers" helping you make them :)]
2 cups flour
1 and 1/2 teaspoons baking powder
1/2 cup butter(not margerine), at room temperature
1 cup sugar
1 egg
1 teaspoon vanilla
1 tablespoon light cream or milk(I use cream when I make these for Christmas, they just taste more Christmasy)
Method:
Step 1) Preheat the oven to 325 degrees(F)
Step 2) Sift the flour, baking powder and salt together into a large bowl.
Step 3) In a separate bowl cream butter until soft.
Step 4) Beat in the sugar, egg, vanilla and cream (or milk)until all ingredients are thoroughly blended.
Step 5) Stir the sugar mixture into the flour,(If needed add just enough flour to make the dough stiff*).
Step 6) Refrigerate for several hours or overnight(overnight is recommended but not necessary).
Step 7) If you want soft cookies roll the dough out on a lightly floured surface to the thickness of 3/16 of an inch and cut to desired shapes using a floured cutter then bake for approximately 10 minutes or until the cookies are lightly browned on the edges. For crisper cookies roll the dough out a little bit thinner about 2/16 of an inch.
Note: * If the dough is soft enough at this stage you may want to consider using a cookie press. Also, always bake a test cookie as your oven temperature may vary from mine and you may need to adjust the temperature and baking time.
