Baked Chicken

3 lb. Whole chicken
1 lb. Small red potatoes, quartered
20 garlic cloves
2 carrots, sliced
2 sprigs of fresh rosemary
1 tsp salt
1/4 tsp pepper
4 tsp. Olive oil

Remove skin from chicken, cut into 8 pieces and trim all fat

Preheat oven to 425 degrees

Place chicken pieces, potatoes, carrots, garlic cloves and rosemary in baking dish. Add salt, pepper and olive oil. Toss to coat.

Bake, stirring occasionally for about 45 to 50 minutes
