Baked Potato Salad
6 medium potatoes, about 2 pounds
1 bunch of finely chopped green onions, about 8 to 12
8 strips of bacon, fried crisp and crumbled
16 oz sour cream
1/2 cup cheddar cheese, shredded
Peel potatoes and cut into bite-sized cubes. Cook potatoes in boiling salted water until just tender.
Drain potatoes. Combine potatoes, onions, bacon and sour cream in a large bowl, salt and pepper to taste. Top with cheddar cheese.
Serves 8.
