Cake Brownies
2 cups Granulated Sugar
2 cup All-purpose Flour
2 large Eggs
1 cup Butter or Margarine
1 tsp. Vanilla
4 Tbs. Cocoa Powder
1 cup Water
1/2 cup Buttermilk
1 tsp. Baking Soda
8-10 Thin Mint Patties
Preheat oven to 375-F degrees and spray a 9-inch by 13-inch cake pan with a non-stick cooking spray.
Combine flour and sugar in a large mixing bowl and reserve.
Combine butter, cocoa powder and water in a saucepan over medium heat and stir constantly to thoroughly blend all ingredients until the mixture comes to a boil.
Add the chocolate sauce mixture to the flour and sugar.
In a separate mixing bowl combine eggs, buttermilk, baking soda and vanilla. Mix well, and add to the flour and sugar bowl.
Using a food processor or blender, grind the mints into fine crumbs, then add chopped mints to the brownie batter and thoroughly mix all ingredients.
Pour batter into prepared cake pan and bake for 20 to 30-minutes.
Cool at least 20-minutes prior serving.
You can add mints, caramels or chocolate candies, even freshly chopped nuts. Use about a half-cup of chocolate chips, hand candies like M & M's or chopped-up chocolate bars.
Or you can add a half cup of chopped walnuts, almonds. You may decide to drizzle the top with melted chocolate or caramel after baking and then sprinkle with chopped nuts, or perhaps melted marshmallows and a sprinkling of shaved chocolate. Dust with powdered sugar or frost with chocolate icing.
