Chicken Gumbo
4 Boneless Chicken Breasts
16 oz Pkg Chopped Okra
12 Green Onions (chopped)
Vegetable Oil
1/3 Cup Flour
1 Tbsp Hot Sauce
3 Bay Leaves
2 Tbsp Filé Powder
1 Tsp Celery Powder
1 Large Can Peeled Tomatoes
1 Large Can Stewed Tomatoes
2 Cans Chicken Stock(28oz)
4 Cups Water
In a six quart covered pot, fry okra over medium heat in 1/3 cup vegetable oil until it begins to brown.
Add green onions and cook until onions are soft.
Add flour and cook until flour begins to brown.
Note: this will cause the mixture to "gum up", but continue to cook until browning begins.
Stir in chicken stock, water, and tomatoes. Increase heat, bring to a boil.
Add remaining ingredients, except for chicken, cover and simmer for 30 minutes.
Cut chicken into bite sized pieces, season with celery powder and fry in 1 tbsp oil until lightly brown.
Stir chicken into gumbo and simmer uncovered for 15 minutes.
Serve over rice.
