Eggs Ala Hackensack

20 Eggs
1 Cup Half & Half
3 Tbsp Butter
Shredded Cheddar Cheese
1 lb. Bacon, cooked & crumbled
1 Can Cream Celery Soup
1 Can Cream Chicken Soup
Onion & Green Pepper, chopped (optional)

Saute onion & green pepper in butter. Beat eggs and half & half.
Fry half of eggs at a time (because there is a large amount) like scrambled eggs.

Put into 9 X 13 inch pan. Spread soups (mixed together) over eggs. Add bacon and top with cheese.

Cover with foil and bake at 250 degrees for 1 hour.

Can be made up the night before and refrigerated until morning.Serves 6-8.
