Jessie's Pineapple Zucchini Bread

3 eggs
2 cups shredded zucchini
1 cup vegetable oil
1 large can crushed pineapple
2 cups sugar
4 cups flour
2 tsp. vanilla
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. baking powder
1 cup ground walnuts
3/4 tsp. nutmeg

Grease and flour 3 loaf pans. Preheat oven to 350º.
Mix all dry ingredients in a large bowl.
Mix all wet ingredients except zucchini in another large bowl.
Gradually add flour mixture to the wet ingredients with a mixer on medium speed.
When thoroughly mixed, add the zucchini.
Pour into prepared pans until they are two-thirds full.
Bake 1 hour to 1 hour and 15 minutes.
