Classic Seven Up Pound Cake
1 Cup butter or margarine [softened]
1/2 Cup shortening
3 Cups sugar
3Cups all purpose flour
1 Cup seven up
1/4 Cup seven up [for the glaze]
1/2 Cup sugar [for the glaze]
1 Teaspoon almond extract
1 Teaspoon vanilla
1/2 Teaspoon salt
5 eggs
Combine the butter, shourtening, sugar, vanilla and almond extract in a large bowl. Beat until light and fluffy.
Mix the flour and the salt together. Add the eggs and the flour,salt mixture into the rest,but you must do this in a special way, you must put one egg in at a time, then put in a little bit of seven up. Then put in a little flour and salt,then a little bit of seven up,then beat it well. Then repeat until all of the egg ,salt,flour and seven up is used up.
Spoon mixture into a greased and floured ten inch tube pan.
Bake at 300 degrees F for one hour and forty five minutes.
Cool in the pan on a wire rack for ten menutes.
Remove the pan
Mix the sugar and seven up [the one's for the glaze]
Spread the glaze mix, over the cake.
