Sweet ‘n Sour Baked Chicken

Saute’
1/4 c. butter
1/2 c. chopped onion
1/2 c. coarsely chopped green pepper
1/2 c. coarsely chopped carrots

Saute’ onion, pepper, and carrots in butter for 5 minutes.

Add:
3/4 c. catsup
1 c. pineapple juice
2 Tbsps. vinegar
1/2 c. firmly packed brown sugar
1/2 tsp. salt
1/2 tsp. pepper
dash of ground ginger
1 Tbsp. soy sauce
1 clove minced garlic

Add to onion/pepper/carrot mixture and cook over medium heat, stirring constantly till mixture boils.
After it comes to a rolling boil, add 1 cup drained pineapple chunks.
Arrange chicken in 13x9x2 inch baking dish (I spray my dish with Pam).
Pour sweet ‘n sour sauce over all.
Bake covered 45 minutes and uncovered 30 minutes @ 350°.

It is excellent served over rice!
